This was always one of my favorite things about the holidays. My mom would always make this because it was easy. She took it to every family Thanksgiving, Christmas, birthday – You name it.

I’ll be honest. I missed this broccoli rice casserole recipe whenever we didn’t make a holiday with my mom. So, I had to steal her recipe and make it myself.

Ingredients You’ll Need

  • Regular Sized Package of Frozen Broccoli
  • 1 Stick of Butter
  • 1 Cup Minute Rice
  • 8 oz can Celery Soup
  • 8 oz of Velveeta or other melting cheese.

How to Make This Broccoli Rice Casserole Recipe

The first step is to cook the broccoli. Put the entire package into a sauce pan with about 1 cup of water and the 1 stick of butter. Bring it to a boil and then remove it from heat.

Next, immediately add in the Minute Rice, celery soup and cheese. If you have a little milk on hand, you can put a little into your empty soup can to rinse out the can of soup into the mix. This will make it a little more creamier. Stir together and pile into a lightly greased baking dish.

Bake the casserole at 325 degrees F for about 20 minutes.

What kind of baking dish?

For as long as I can remember, we made this casserole in a glass 9X13 baking dish. This recipe will fill that size very well. You need to spray the glass baking dish very lightly before you put the casserole in.

Then, once the casserole is baked, it’s ready to be served or covered to take along to any get together. You can also freeze it for later enjoyment. It freezes very well.

The other type of pan you could use is a jumbo muffin tin pan for single servings. Remember when I was teasing you before about how you could eat it all yourself. This is it – Just make single servings with a jumbo muffin tin.

Lightly spray your muffin tin with a cooking spray and fill the muffin spots with casserole. Then, you can easily take them out after it’s baked. The cheese will help it to stick together well. You’ll know it’s done when the broccoli, rice and cheese is a light brown.
