I made these last week for my in-laws, this ladoo is everyone’s favorite there 🙂 This is one of the very basic sweet we make for festivals like Diwali. Mom makes this every time I visit her specially for my in laws family and pass it through me.
She just mixes and give, I go there and shape it and give it to them. I remember this being called as seeni urundai too. Thinking that I am trying something different to picture these rava ladoos, I made them look so unusual 🙁…Bear with it! Check out my rava khoya laddu
🥘 Ingredients
Rava - Rava is semolina, cream of wheat available commercially in shops. There are so many varieties we get widely in India. Roasted, un roasted, double roasted, Bombay rava, Ceroti rava, upma rava etc.
Everything will work in this recipe. If you are using roasted, or double roasted, you just need to heat it up until crisp without changing color. But never skip roasting as it helps in powdering fine.
📖 Variations
We always powder rava finely and make it. This will give perfect results, that when you pop in mouth, it will just dissolve in mouth. But I have seen many people make laddu without powdering.
For this recipe, please follow the steps for perfect results.
You can use unrefined sugar in place of white sugar or even jaggery, but the quantity may be needed more as these will have less sweetness. Classic recipe uses only white sugar.
💭 Top tip
- Make sure to powder well. I also suggest an extra step of sieving so that it's really fine. This applies for both rava and sugar.
- Using milk in the mixture at times gives small lumps. So make sure to mix well.
- The ghee should be warm and the mixture should be shaped to ladoos when it is warm. This way it is easy to hold and retain it's shape.
- If it does not hold shape, add little more warm ghee, mix and try again.
📝 My notes
Adding more ghee will make the laddu look dull in color. So add only required amount. Adding milk will reduce shelf life. Rava ladoo can stay good in shelf for 20 days if made using only ghee.

Ingredients
- 1 cup Rava sooji/ semolina
- 1 cup Sugar
- ¼ cup Ghee
- 1 cardamom
- 8 Cashew nuts
Instructions
Heat a pan and add the rava, reduce flame and roast the rava until a nice aroma wafts. Make sure to not change the rava color and roast evenly. To ensure this, keep stirring continuously.
Cool down and grind it into a very fine powder using mixer. (If you are making in bulk, you can grind in mill).
Powder the sugar into a very fine powder as well, along with cardamom.
Transfer the powdered rava and sugar to a large bowl. (If you want you can sieve both to get a smooth finish ladoo).
Fry broken cashews in the ghee and add these to the rava and sugar mixture.
Mix thoroughly. First you can use a ladle to mix as the ghee will be hot. Wait until it is warm enough to handle.
Make small balls out of this mixture immediately, roll it tight, If you could not roll and the mixture is too dry, add more warm ghee to it and make balls again.

Notes
- At times we add milk as binding agent, but I avoid it these days.
- Make sure to powder the rava very very fine, if its coarse, it will not hold the shape for long and easily get broken.
- Add warm, heated ghee and make laddu immediately as this will give you mighty ladoos, wont break easily.
- Adding more ghee makes the ladoo look dull in color. So add accordingly.

It can be kept upto 2 weeks when kept outside. Put avoid using milk and use only ghee. Fridge means 4 weeks.

If you like butter smell, you can use melted butter. Othewise, you can do with milk.
