Your site is very informative on all the different flours, and your recipes are some of the ones my Mom used to make. bread takes practice. Mom always had wonderful bread. always had non fat dry milk in the house. She also would use the left over potato water per instructions from my Dad ( he worked at Martha White Flour Company when he was 14 yrs. old) The old baker there taught him. The best potato bread with the water. its crown was bigger than Sunbeam! Do You Have The Recipe For The Sun Dried Tomato Bread? There was no button to click on for it. Would like to have it as I really like the Panara's Tomato Bread. But this swirl looks awesome!

What ingredient makes bread soft and fluffy? ›

Adding sugar weakens the gluten structure, absorbs water, and eventually makes the bread lighter and softer. As a result, sugar improves the bread's taste, structure and texture. Yeast also eats up sugar to produce carbon dioxide, which raises the dough and makes bread fluffy.

What gives bread the best flavor? ›

Spices: Adding spices like cumin, coriander, or fennel seeds can give bread a unique and delicious taste. Cheese: Grated cheese, such as cheddar, can be added to the dough to make cheese bread. Seeds: Adding seeds like sunflower, pumpkin, or sesame seeds can add a nice crunch and flavor to bread.

Why do you put vinegar in homemade bread? ›

And It's not just cakes that benefit from a touch of vinegar, but also biscuits, muffins, and even bread. So when it comes to bread, it's the same concept – vinegar inhibits gluten formation which leads to a more relaxed and extensible dough, resulting in a less dense and chewy bread.

What is the best flour for bread? ›

While bread flour is the best option, it can sometimes be used if you don't have bread flour. “Check the protein content,” advises Chef Jürgen, since it can vary from brand to brand, and an all-purpose flour that contains protein on the higher end of the range, 12 to 13 percent, will produce a better outcome.

Is it healthier to eat homemade bread? ›

Another benefit is that homemade bread doesn't contain any chemicals or artificial additives. It's also generally lower in calories than store-bought bread.

How long does homemade bread last? ›

Johanna Hartzheim, co-founder and head of product at Wildgrain, a bread and pasta delivery service, recommends eating homemade bread within three days but says it will last up to a week. "The bread will start to dry up and become a bit harder over time, but it takes much longer until it becomes moldy," she says.

Is homemade bread healthier than store bought? ›

Store-bought bread is also often higher in sodium and contains more trans fats due to margarine and vegetable shortening. Whereas, in your homemade bread, you can use healthy unsaturated fats such as extra virgin olive oil or grapeseed oil.

How do bakeries get their bread so soft? ›

There's something magical about the bread you get at your local bakeries - they're always sooo soft and fluffy. Many of these breads, especially packaged ones, are made with a ton of chemical additives such as calcium propionate, amylase, and chlorine dioxide which help keep them soft, light, and fluffy for days.

Is it better to use oil or butter for bread? ›

When you substitute oil for butter, you need to take note of the texture. If you want delicate, soft, and tender baked goods, I recommend using oil vs. butter. Butter will result in a denser crumb and not be as moist.

Can dough rise for too long? ›

If the dough has risen too long, it's going to feel fragile and might even collapse as you poke it,” says Maggie. If this is the case, there's a chance you can save your dough by giving it a quick re-shape. Learn more about this fix in our blog on saving overproofed dough.

Does bread taste better the longer it rises? ›

Quickly proofed bread tastes like wheat flour. Because that's mostly what it is. But long rising bread has a chance for the yeasts (and bacteria, too, in the case of sourdough) to eat the starches and burp out all sorts of flavorful byproducts, in addition to the CO2 we rely on to leaven the bread.

Why does bakery bread taste so good? ›

The secret to the wonderful taste and aroma of freshly baked bread is the Maillard reaction. It's a chemical reaction between proteins, certain carbohydrates and some of the fatty acids that occur when bread is baked in the oven, which gives it a delicious flavour and fine colour.

Why does my homemade bread taste bland? ›

Salt adds flavor to bread. If none or too little is used in a recipe, the bread will lack the right flavor and taste "bland." If you reduce the amount of salt, try adding some dried herbs to increase the flavor. Too much yeast in bread will give bread an off-taste.

How do you keep homemade bread light and fluffy? ›

How can you keep homemade bread soft and moist? Store bread in an airtight container or plastic bag: This will help trap the bread's natural moisture and prevent it from drying out. Keep bread at room temperature: Storing bread in the refrigerator can cause it to dry out, so it's best to keep it at room temperature.

What is the most important step in bread making? ›

Kneading. Kneading involves stretching and folding the dough in a rhythmical manner that develops the gluten in the flour and releases excess gas. Any large gas holes that may have formed during rising are released by kneading and so a more even distribution of both gas bubbles and temperature also results.

What is the secret to success when making quick breads? ›

Quick breads are typically mixed by hand, and it's important not to overmix the batter. Overmixing can cause the gluten in the flour to develop, resulting in a tough and chewy bread. Mix the batter just until the ingredients are combined, and then stop. If there are a few lumps in the batter, that's okay.
